In 2007, we introduced to our menu and our steak cart the Wagyu. Wagyu is known to be the source of kobe beef. It is raised in Australia primarily to produce what is known to be the best steak in the world. The price of our wagyu is just slightly higher than our certified angus beef, but the difference in tenderness and quality is remarkable. It has become our new best seller! Although his children are now managing the restaurants, Melo Santiago still remains highly involved with the business. He continues to guide them and help them with major decisions.
